Mary Grace Dimacali, as a child, was always thrilled to watch dough expand with a life of its own, a fascination that she carried on to motherhood. In 1983, on the mornings of her children’s birthdays, she would delight them with personally decorated cakes. In 1986, stemming from the pleasure of seeing her friends enjoying her fruitcakes and following her heart’s desire to spread joy through her creations, she took a 12-month course on baking in the US to further enhance her budding talent. She came home to harness all she had learned to perfect her own formula for a local delicacy, an ensaymada with just the right texture and flavor. After bouts of tears and frustration, countless family taste tests over Sunday lunches, and the seal of approval from them, most especially her parents, she knew she had hit Eureka!
In 1994, with five children in tow and a supportive husband, she joined her first bazaar, where she offered her ensaymadas and cheese rolls! Then in 2022, after several Christmas seasons and with the hope that her family and friends could bring home a little bit of Christmas all year round, she opened her first little store. In the year 2006, four years and eleven kiosks later, she opened her first cafe! A home away from home, where family and friends share stories over hearty meals capped off by a wonderful combination of Mary Grace Hot Chocolate and her signature Ensaymada and Cheese Rolls!
To this day, Mary Grace Dimacali is still actively involved in running the business. In actuality, she still creates the designs and decor for each location and makes sure to stop by each café in person to inspect and taste-test. Her fascination with dough lives in her heart, alongside whipping up new recipes for all to enjoy during joyous family Sunday lunches—the source and inspiration of Mary Grace.
